Buffalo Chicken Texas Twinkies

The Texas Twinkie is hands down one of the best finger foods you can get your hands on. This recipe takes some time, the result is worth. This recipe puts a spin on the original Texas Twinkie which has brisket and cream cheese as a filling, and uses Buffalo chicken as filling.


Estimated time: 2.5 hours



  • 12 jalapeño

  • 12 strips of bacon

  • 1 block cream cheese

  • 1 rotisserie chicken

  • 2 cups cheddar cheese shredded

  • 1 cup hot sauce

  • Salt and pepper to taste

  • Seasoning of choice


  1. Remove veins and seeds from jalapeños if wanted, leave for more spice. Do this by making one cut along the top of the pepper and one vertical. Don’t slice through entire jalapeño

  2. Place jalapeños in the oven or smoker at 275 for 20-30 minutes to soften.

  3. Remove skin from rotisserie chicken. Shred and place in a bowl. Add in cream cheese, cheddar, and hot sauce and mix

  4. Remove peppers from oven/smoker and fill peppers with chicken mix and close pepper. Wrap a slice of bacon around each pepper to secure mixture inside. Season the outside of jalapeño with seasoning of choice

  5. Place back in oven/smoker until bacon is cooked to your preference.

  6. Remove and let sit. Enjoy!
