The Golden Gaucho Stack

I couldn't find words what to call this. I tried coming up with something complicated- but let's call it what it is. This sandwich is absolutely stacked with flavor. Imagine playing a pickup basketball game with your friends, but your team is LeBron James, Michael Jordan, Kobe (RIP), and Steph Curry. Yeah that is exactly what this is. You've got your sweet, savory, salty, spicy in EVERY SINGLE BITE. The flavor is in this work- I'm telling you.
and if you don't believe me- then i highly suggest you try this for yourself. This is my fusion dish entry for the Great Griddle Off- and it combines Colombian, Argentinian, and good ole Texas barbecue into one dish.
Ingredients:
4 slices smoked brisket
1 pack jiffy cornbread mix.
1/3 cup milk
4 slices mozzarella cheese or 2 cups shredded quesadilla cheese (best for melting)
2 bundles of parsley
1 cup olive oil
1/2 cup crushed red pepper
2 tbsp salt
4 cloves garlic minced or use 2 tbsp minced garlic
Steps:
- Make your chimichurri first by combining parsley, crushed red pepper, salt, and olive oil into a food processor or blender (this saves a lot of time). Set aside in fridge.
- Mix cornbread mix with milk into a bowl.
- Start up your Blackstone. Using an egg ring or similar- pour cornbread mix into egg ring and let it cook. Flip after a couple minutes. Place cheese slices between 2 patties and allow it to melt.
- i used pre-smoked brisket that i had cooked on my Bronco. Your going to put 1-2 slices of brisket between 2 arepa stacks and top with your chimichurri.
- Serve and observe the enjoyment on everyone's faces eating it.
