
The Gaucho Burger

I'm a big guy, but I'm an even bigger burger guy. If you asked me what food I'd eat for the rest of my life and had to choose one, I'd tell you every single time it would be....a burger.
Burgers are so versatile, you can dress it up with different toppings, change the taste, and it NEVER gets old (I don't care what anyone says and if you disagree- you're wrong).
This burger was inspired by my new found love for chimichurri. Such an underrated food sauce. Is it a sauce though? Well we made some chimichurri sauce for this. Lets get to it!
Ingredients:
- 2 Pounds ground chuck 80/20
- 1 pack burger buns (I'd go brioche or potato)
- 1 pound sliced mozzarella
- 1 bunch arugula
- 1 tomato (pick your favorite)
- 1 red onion
- 3 tbsp avocado oil
- 1 cup mayo
- 1/4 cup white vinegar
- 2 tbsp dried cilantro, dried oregano, dried parley, garlic powder, onion powder, crushed red pepper (this is your chimichurri base)
Steps:
- Combine your dried seasonings, separate in half.
- In a jar combine half of the seasoning with the mayo and vinegar. Shake well and set aside.
- Chop arugula, tomato, red onion and combine in a bowl. Add in avocado oil and stir (this is your slaw)
- Form meat balls for your burgers and preparethem. Fire up your Blackstone (or grill.....weirdo)
- Get your burgers on, smash em' if you can. Once flipped dust with remaining seasoning.
- Top with cheese and let it melt.
- Assemble the burger (patties-slaw-sauce on bun)
- Devour time.
