Pork Chop Martini

There are pork chops… and then there’s the Pork Chop Martini.

This dish takes thin, crispy, golden-fried pork chops and hits them with a buttery cherry pepper sauce packed with acidity, a little heat, fresh basil, and just enough sweetness to balance everything out.

The chops get pounded thin and double-dredged for a light but seriously crispy crust. Then the sauce comes together with sautéed cherry peppers, olive oil, red wine vinegar, fresh lemon, and cold butter.

Spoon that sauce over the crispy pork, finish it with fresh basil and a drizzle of balsamic glaze, and you’ve got one of those dishes that tastes like it came straight out of an old-school Italian restaurant.

And no—there’s no actual martini involved.

Ingredients

For the Pork Chops

  • 4 pork loin chops or thick boneless pork chops
  • Kosher salt, to taste
  • Freshly cracked black pepper, to taste
  • 1 cup all-purpose flour
  • 4 large eggs, beaten
  • Olive oil, for frying

For the Cherry Pepper Butter Sauce

  • 5 tablespoons extra-virgin olive oil
  • SPG seasoning, to taste
  • 1 jar sliced cherry peppers, drained
  • 3 tablespoons red wine vinegar
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons cold butter
  • ¼ cup fresh basil, chopped
  • Balsamic glaze, optional


How to Make Pork Chop Martini

1. Pound the Pork Chops

Place each pork chop between two pieces of plastic wrap or parchment paper.

Using a meat mallet, pound the chops until they’re just under ½-inch thick.

Getting them thin is important. They’ll cook quickly, stay tender, and give you more surface area for that crispy coating.

2. Season

Season both sides of the pork chops generously with kosher salt and freshly cracked black pepper.

3. Double Dredge

Set up two shallow dishes—one containing the flour and another containing the beaten eggs.

Coat each pork chop:

Flour → Egg → Flour

Press the final layer of flour gently into the pork so you get an even coating, then shake off any excess.

4. Fry the Pork Chops

Add enough olive oil to generously coat the bottom of a large skillet and heat over medium-high heat.

Once the oil is hot, carefully add the pork chops.

Fry until the first side is crispy and golden brown, then flip and cook the other side.

Continue cooking until the pork reaches an internal temperature of 145°F.

Transfer the finished chops to a wire rack or plate and let them rest while you make the sauce.


Make the Cherry Pepper Butter Sauce

5. Sauté the Cherry Peppers

Add the 5 tablespoons of olive oil to a skillet over medium heat.

Add the drained cherry peppers and sauté until they’re warmed through, slightly softened, and fragrant.

Season with SPG to taste.

6. Add the Acid

Pour in:

  • 3 tablespoons red wine vinegar
  • 2 tablespoons fresh lemon juice

Stir everything together and scrape up any browned bits from the bottom of the pan.

Those little bits equal flavor.

7. Reduce the Sauce

Bring the mixture to a gentle simmer.

Let it cook for a few minutes until the liquid reduces slightly and the flavors become more concentrated.

You don’t want to completely cook the liquid away. You’re looking for a loose, glossy sauce that can be spooned over the pork.

8. Finish With Cold Butter

Turn the heat to low.

Add 2 tablespoons of cold butter and whisk it into the sauce until completely melted.

The cold butter helps emulsify the sauce and gives it that glossy, restaurant-style finish.

For a little extra sweetness, add a small drizzle of balsamic glaze.


9. Build the Pork Chop Martini

Place the crispy pork chops onto a serving platter.

Spoon the hot cherry peppers and butter sauce generously over each chop.

Make sure you’re getting some of that sauce and plenty of peppers on every piece.

10. Finish It

Top everything with freshly chopped basil.

Finish with an optional drizzle of balsamic glaze.

Serve immediately.

Don’t sauce the pork until you’re ready to eat.

The whole point of pounding and double-dredging the chops is creating that killer crispy exterior. If they sit underneath the sauce too long, you’re going to lose it.

Keep the chops crispy, get your sauce finished, and then spoon it over the pork right before it hits the table.

That way every bite gives you crispy pork, buttery sauce, and cherry peppers.

What to Serve With Pork Chop Martini

This sauce is too good to leave behind on the plate, so pair it with something that’ll soak it up.

My picks would be creamy mashed potatoes, crispy roasted potatoes, garlic bread, pasta with Parmesan, or broccoli rabe.

If I’m building the full plate, I’m going Pork Chop Martini + crispy roasted potatoes + garlicky broccoli rabe with some extra cherry pepper sauce over the potatoes.
