
Bourbon Peach Stuffed French Toast

Yes you are actually reading this correctly. The title is enough to make you stop and ask 'how am I going to make this?' It's not too hard at all and you'll draw quite the crowd for breakfast or brunch.
Ingredients:
- 2 loaves brioche bread (unsliced)
- 2 Large cans Peaches in lite syrup
- 3 eggs
- 2 cups milk
- 1 pint heavy whipping cream
- 1/2 cup bourbon
- 6 tbsp ground cinnamon
- 2 tbsp cinnamon
- 2 tbsp lemon juice
- 2 tsp vanilla
- 1/2 cup brown sugar (optional)
Steps
- Start by opening peaches and mixing in a bowl with half the cinnamon, lemon juice, and brown sugar (optional)
- Fire up the Blackstone and place peach mixture on there. Toss frequently and allow apples to caramelize. Add bourbon onto hot apple mixture and continue to toss. Remove and set aside
- mix eggs, vanilla, remaining cinnamon, and milk into a bowl and whisk together.
- Cut brioche into thick slices (about 2 in). Cut each slice into half diagonally and creat a pocket in the center. Fill pocket with peach mixture and dip into egg mixture.
- Place each slice onto griddle with a small amount of butter and allow each side to test. remove once bread is golden and firm.
- Beat together whipping cream and vanilla. Top French toast with that and powdered sugar.
- Plate. Serve. Devour
